Ok, I am stoopid about this. Is he just muting the B string, or picking strings with two fingers?

Too bad there's not much showing his right hand with the close-ups on the left hand shapes (split-screen would be most useful), SVL, but watch the 'distant' shots, like a the start.

You could use your thumb, but he's actually picking the G, ring finger plucking the E. I do them either way; it's why I favor smallish teardrop-shape picks, to either just use the tip with some thumb meat, or, if I go with my thumb, to 'bury' the pick in the palm of my hand and hold it in there with my middle finger. With the pick, he can still use the middle finger to get the B and do 'triple stops'.
