My local farmer/supplier told me about how he cooks his buttercup squash (the squat shape type) very simply:
- cut thin slices
- put them in a baking dish with a little olive oil at bottom
- add olive oil on top
- bake at 350 deg F until done, usually 15 minutes or so, I don't recall
Easy to make, quick, and simply delicious!
I am sure it can be applied to other types of squash I just know that this type and texture work well here.
