Why do blues players use THIS note over the V chord?

This is a short video explaining why blues players often add this note to the minor pentatonic when playing over the V chord. I'm explaining it from the perspective of using the minor pentatonic for I - IV - V chords, but then emphasize the V chord triad when playing over that chord. Hope this makes sense.
