Hey e'budy. I recently repaired (received in pieces) a no name resonator guitar with a spider bridge and a split wooden saddle.
I put in a plastic split saddle which worked quite well. and I liked the brightness.
However the owner didn't and thinks the wooden will be a little more subtle. would changing saddles make a marked difference?

I would think so, as the major contact/transmission point from strings to resonator - but you never know until you try! You can get a nice ebony-capped maple saddle (which you will have to split yourself) pretty cheaply on ebay.
