There are lots of options for scales over that progression I heard in the first clip. I often use E dorian for the E chord and then E Melodic Minor or E Harmonic Minor over the B chord. Or B Altered Scale or the Dim scale... etc. Lots of options.

You mean over a 2-5-1 progression?? True that!
